Indonesia: Sate Ayam (Chicken Satay)
Indonesia consists of over seventeen thousand islands, including Sumatra, Java, Sulawesi, and parts of Borneo and New Guinea. It is located between the Pacific and Indian oceans. With more than 275 million people, Indonesia is the world’s fourth-most populous country.
Sate Ayam (chicken satay) is marinated in soy sauce mix, before being skewered. The skewers of meat are grilled on an extremely hot charcoal fire, so the meat cooks quickly, while leaving it smoky and juicy. Often the skewers are served with a peanut sauce. Other nations now claim satay, but Indonesians consider it a national dish conceived by street vendors and popularized by Arab traders.

WHAT’S NOT SO GREAT?
The fat content is higher, from the coconut milk and the peanut butter. However, if the sauce is used in moderation, and it is served with a light side like grilled vegetables, it should be in a perfectly acceptable range.

However, grilling is also known for creating carcinogens and increasing your risk of cancer. The risk is highest when you cook meat, especially red meat, high in fat at high temperatures. It’s the smoke, the charring, and the high temperature. To reduce risk, cook at a lower heat with less smoke, leaner meats, and less charring.
