Angola: Muamba de Galinha (Chicken Stew)

Angola is located on the west coast of Southern Africa and is the second-largest Portuguese-speaking country behind Brazil. It is bordered by Namibia, the Democratic Republic of the Congo, Zambia, and the Atlantic Ocean.

Even being fairly adventurous, we skipped over the recipe for pan-fried caterpillar, assuming most of you would not show interest. Apparently, they taste like prawns.

Instead here is a recipe for the national dish, Muamba de Galinha, made with chicken, red palm oil, garlic, okra and Angolan hot chile pepper.

WHAT’S NOT SO GREAT?

Palm oil. Although it’s traditionally used in this dish, it’s one of the worst oils because of its saturated fat content. The author does split the ratio to half palm and half canola. I might even take it a step further and use 1/3 palm oil and 2/3 grapeseed oil.

WHAT’S GREAT?

Butternut squash. Tomatoes. And Okra.

Okra is often used to thicken dishes. But it has health benefits as well! One cup provides:

  • 80% Vitamin K
  • 44% Vitamin C
  • 24% Manganese
  • 4g of Fiber

Okra is also a source of antioxidants, including phenolic compounds and flavonoids, such as catechins and quercetin.
