Sri Lanka: Chicken Kottu Roti with Curry Sauce

Sri Lanka is an island country in South Asia, it is southeast of India and lies in the Indian Ocean. Most authentic Sri Lanka food is characterized by powerful flavors, whether it’s hot or sour or spicy.

Kottu is chopped roti bread fried on a flat top with vegetables, meats, or eggs, resulting in a fried-rice-like dish, minus the rice. It’s a typical street vendor food that is wonderful to watch being made. At home this could easily be a meal.

WHAT’S NOT SO GREAT?

  • The chopped roti is a unique substitution for rice. It’s filling but will provide a lot of calories depending on portion size.
  • Skip the optional cheese, it’s extra fat and calories you won’t need. Already in this recipe you have bread which has more calories and chicken thighs which have more fat.

WHAT’S GREAT?

  • The vegetables. Cabbage, carrots, leeks, ginger, garlic, onions = vitamins!
  • For example, did you know that just one cup of cabbage provides 56% of Vitamin K and 36% of Vitamin C?

WHILE YOU’RE THERE: Surfing in Hikkaduwa.

Hikkaduwa is a seaside resort town in southwestern Sri Lanka. It’s known for its strong surf, beaches, and a variety of restaurants and bars. Opposite Hikkaduwa Beach is Hikkaduwa National Park, whose shallow waters house a coral sanctuary and are home to marine turtles and exotic fish. Take surfing lessons at the Hippie Surf School, it is highly-rated and reasonably priced.
