Morocco: Chicken Tagine
Morocco is a North African country bordering the Atlantic Ocean, Mediterranean Sea, Algeria, and Western Sahara. Moroccan cuisine is very diversified, it is mainly a fusion of Moorish, European, and Mediterranean cuisines.
This recipe below combines two dishes that Morocco is known for: tagine and couscous. It has been slightly Americanized to account for the clay tagine which is usually cooked over charcoal and the preserved lemons which may be hard to find.

WHAT’S NOT SO GREAT?
Chicken thighs with skin. Maybe this will help. Most of the fat is in the skin.
- A 3.5 ounce skinless chicken thigh has 8g of fat.
- A 3.5 ounce chicken thigh with skin would have 16g of fat.
WHAT’S GREAT?
- Carrots. Orange carrots get their bright color from beta carotene, an antioxidant that your body converts into vitamin A. This helps your eyesight.
- Green Olives. Olives have a high concentration of vitamin E. Vitamin E is good for your skin and functions as an antioxidant to protect cells from damage. They are also high in the minerals iron and copper. Watch out for too much salt though if you overeat olives! Keep them in moderation.

Windsurfing, also called sailboarding, is a wind propelled water sport that is a combination of sailing and surfing. The windsurfer uses the wind blowing through a sail to propel a board forward under their feet and skim across the water.
